Zesty Lemon Spinach Chicken Sauté

Ingredients

Recipe makes 6 Servings

2 chicken breast
1/2 Tsp kosher salt
1/2 Tsp black pepper
1/3 cup(s) olive oil
1 garlic clove, chopped
1/2 cup(s) artichoke hearts
1/2 cup(s) cherry tomatoes, cut in half
2 cup(s) baby spinach
1/2 cup(s) white wine
1/2 Lb whole wheat pasta
1 lemon

Instructions

Place a large sauté pan over medium-high heat.

Season chicken lightly with salt and pepper.

Add oil to sauté pan and cook 3 to 4 minutes per side or until chicken browns nicely.

Add garlic, artichoke hearts and cherry tomatoes. Cook an additional 4 minutes.

Add spinach and white wine. Simmer briefly then toss with cooked pasta.

Squeeze lemon over dish and serve immediately.
