White Wine and Garlic Court Bouillon

Ingredients

Recipe makes 2 Servings

16 cup(s) water
4 lemon, cut in half, divided use
2 garlic
1/4 cup(s) white onion, small dice
5 black peppercorns
1 bay leaf
1 thyme spring
1 Tbsp salt
1 Oz dry white wine (pinot grigio, sauvignon blanc or Chardonnay)
2 Lb live lobsters, 1 pound each

Instructions

Place all ingredients for court bouillon into a 2 gallon stockpot, squeezing only 2 lemons into the pot first then dropping in (needs enough room for liquid and lobsters). Bring to a simmer.

Submerge lobsters tail first in stockpot.

Turn heat to high, bring to a boil then reduce heat to a simmer.

Cook lobsters 6 to 8 minutes; shells will turn bright red.

Transfer to a clean plate and serve with lemons and White Wine and Garlic Drawn Butter.
