Recipe makes 6 Servings

3 Lb brisket point
1 Tbsp kosher salt, plus more as needed
1 Tbsp black pepper
1 Tbsp ground cumin
1 cup(s) beer or water
28 Oz bag of frozen tater tots
2 cup(s) Monterey Jack cheese, shredded
1 Culinary Cowgirls Lonestar Queso

Instructions

Preheat smoker to 225ºF. I prefer to use pecan for this application but any wood will work.

Meanwhile, rub brisket with salt, pepper and cumin. Let meat sit at least 30 minutes to come to room temperature.

Place brisket on a sheet pan with a fitted rack. Set pan with brisket in smoker and add water or beer.

Smoke brisket 1 1/2 hours per pound, maintaining the heat at 225ºF. Cover with foil when tender and allow to rest.

Preheat oven to 400ºF.

Spread tater tots out on a sheet pan and cook until crispy, about 30 to 45 minutes.

Heat queso in microwave or in a non stick pan and keep warm.

Assemble poutine by adding hot tater tots to a large bowl, followed by chopped up or shredded brisket. Cover with shredded cheese then top evenly with queso.

Optional garnish: green onions, bacon or both.
