1 cup(s) watercress, stems removed
1 cup(s) chives
1 cup(s) arugula
1 cup(s) parsley, stems removed
2 cup(s) grapeseed oil
1/2 Tsp kosher salt
1 Tsp lemon, zest

Instructions

Fill a large pot with 2 quarts water and add 1 tablespoon salt. Bring to a boil. Fill a large bowl with ice water.

When water boils, place watercress, chives, arugula and parsley in boiling water for 10 seconds then remove and quickly place in ice water to shock. Remove from ice water and place herbs in a towel and squeeze out as much water as possible.

Place herbs, grapeseed oil, lemon zest, and kosher salt in a blender and blend on high speed for 1 minute. Strain and adjust seasoning if necessary. Refrigerate until ready to use.
