Watercress, Green Bean And Tomato Salad

Ingredients

Recipe makes 6 Servings

1/2 cup(s) walnuts halves and pieces, toasted and coarsely chopped
3/4 Lb green beans, halved and ends trimmed
2 Tbsp red wine vinegar
1 Tbsp Dijon mustard
3 Tbsp extra virgin olive oil
1/4 Tsp coarse sea salt
1/4 Tsp black pepper
16 Oz cherry tomatoes, halved
2 bunches of watercress, rinsed, dried and stems trimmed and discarded

Instructions

Heat oven to 350°F.

Toast walnuts on a baking sheet 10 minutes or until lightly browned.

Meanwhile, bring 2 quarts water to a boil in a 4-quart pot over high heat.

Cook green beans in boiling water 3 minutes or until tender. Drain.

Spread beans out on a clean towel to cool and dry thoroughly.

For dressing, blend vinegar and mustard in a small bowl.

Slowly whisk oil into mustard mixture and add salt and pepper.

Place green beans, tomatoes, watercress and walnuts in large bowl and toss with dressing.

Serve at room temperature.
