1 Qt Kale, chopped and tightly packed
1 cup(s) red onions, julienned or thinly sliced
2 cup(s) Opal apples, cored, peeled and diced small,
1/2 cup(s) garlic cloves, left whole, skins peeled and ends trimmed
1/4 cup(s) Extra Virgin Olive Oil, plus more as needed
1 cup(s) Italian Farro Quick Cook Grains
1 cup(s) Golden Raisins
1/4 cup(s) fresh Mint, roughly chopped or torn
1/2 cup(s) pomegranate seeds, plus more as needed

Instructions

Preheat oven to 375ºF.

In a bowl, combine kale, onions, apples, and garlic with olive oil and a liberal pinch of salt and pepper.

Transfer to a sheet pan and roast for 30 to 35 minutes or until nicely browned and kale is crisp.

Meanwhile, make farro according to package instructions. Remove from heat, cover, and keep warm.

To assemble salad, combine roasted veggies and apples with farro, golden raisins, mint, and pomegranate seeds.

Dress salad with any dressing or simply add a little olive oil and a squeeze of lemon juice. Season to taste as needed and serve warm.
