2 Tbsp extra virgin olive oil
1 cup(s) celery, sliced
1 cup(s) carrots, sliced
1 Tbsp garlic, chopped
1 small white onion, diced
1 cup(s) H-E-B Champagne Sweet Tomatoes
1 bay leaf
4 cup(s) low sodium chicken broth
1/3 cup(s) stars pasta (estrellas)
1 cup(s) baby spinach, chopped
1/2 Tsp kosher salt
1/2 Tsp black pepper
1 lemon, juiced

Instructions

In a large, heavy bottom pot, heat 2 tablespoons olive oil.

Add celery, carrot, garlic and onion and cook until translucent.

Add cherry tomatoes and bay leaf. Cook, stirring occasionally until the tomatoes begin to blister.

Once tomatoes begin to blister, stir in chicken broth, stars pasta, spinach, salt, pepper and lemon juice. Bring to a low simmer and cook until the pasta stars are cooked through.

Chef's note: Serve with a bit of Parmesan cheese and crackers.
