1/4 cup(s) H-E-B Organics Grade A Medium Amber Maple Syrup
1 1/2 Tsp H-E-B Fine Crystals Mediterranean Sea Salt, divided use

Preheat oven to 350ºF. In a large bowl, place drained sweet potatoes, 1/2 cup of brown sugar, cinnamon, vanilla, maple syrup, and 1 teaspoon salt.

Using a potato masher or heavy whisk mash the sweet potato mixture until ingredients are thoroughly combined and only small chinks of sweet potato remain.

Spread sweet potato mixture into an 8 x 8-inch pan and gently tap to level and remove air bubbles.

In a small bowl combine vegan butter, flour, remaining salt and brown sugar, and pecan pieces. Mix with a fork until well combined and crumbly.

Spread pecan streusel topping evenly on top of sweet potatoes and bake for 50 to 60 minutes. When done, remove from oven and set aside for 5 minutes prior to serving.
