Turkey Bolognese with Spaghetti Squash

1 medium spaghetti squash, halved lengthwise and seeds removed
1 Tbsp cooking oil
1 Lb ground turkey
12 Oz roasted garlic pasta sauce
1/2 cup(s) low sodium chicken broth

Place squash cut-side down in a microwave-safe casserole dish. Add water to a quarter-inch up the sides. Cover tightly with plastic wrap and poke several holes for venting. Microwave 12 to 15 minutes or until a sharp knife easily pierces squash. Remove from dish and shred with 2 forks. Set aside.

While squash cooks, heat oil in a large saucepan over medium-high heat. Add turkey and cook until no pink remains. Season to taste with salt and pepper.

Stir in pasta sauce and chicken broth. Bring to a simmer and cook for 5 minutes. To serve, spoon sauce over squash and top with Parmesan cheese if desired.
