Truffle Linguine with Mushrooms and Chicken

Ingredients

Recipe makes 4 Servings

8 Oz linguine
2 Tbsp olive oil
2 chicken breast, about 12 oz.
8 Oz baby bella mushrooms, quartered
1/2 cup(s) dry white wine, or broth
2 Tbsp parsley, chopped
9 4/5 Oz H-E-B Just the Sauce Truffle

Instructions

Cook pasta according to package directions, drain and set aside.

Heat oil in a large skillet over medium-high. Season chicken generously with salt and pepper and place in pan. Sear for several minutes on each side until cooked through. Remove from pan and set aside.

Add in mushrooms and cook until well browned and they have released all of their liquid. Continue to cook until all liquid has evaporated, then add in white wine.

Let wine simmer for several minutes. Meanwhile slice chicken and return to pan. Add in parsley and truffle sauce. Stir to combine.

Add in pasta and toss to coat. Serve immediately.
