The Perfect Roasted Chicken

Ingredients

Recipe makes 5 Servings

3 Lb all natural whole chicken
2 Tsp kosher salt
1 Tsp freshly ground pepper

Instructions

Preheat oven to 450°F.

Remove chicken from packaging and discard neck and giblets. Using a paper towel, dry chicken completely.

Season chicken all over (including the cavity) with salt and pepper.

Using butcher's twine, truss chicken.

To truss chicken, cut a 24-inch piece of twine. Place chicken on cutting board with legs facing away from you.

Place the center of twine under tail of chicken. Cross the ends under chicken then loop around legs and pull the string tight to bring legs together.

Flip chicken over and bring twine around sides of chicken to tuck in wings. Pull tight and tie twine securely with knot.

Place chicken on a sheet pan and place in oven. Allow chicken to cook undisturbed 50 to 60 minutes.

Bake chicken until meat thermometer inserted between thigh and breast reads 165°F.

Rest chicken 10 minutes before cutting.
