Thai Shrimp Salad

Ingredients

Recipe makes 4 Servings

12 Oz large shrimp, peeled and deveined
4 Tbsp lime, juiced
1 Tbsp Kikkomon All-Purpose Less Sodium Soy Sauce
2 Tsp brown sugar
2 Tbsp Sambal Oelek Ground Fresh Chili Paste
1 Tbsp garlic, minced
2 Tbsp canola oil
1 romaine lettuce, torn
3 shallots, juilienned
1 cup(s) basil, torn
1 cup(s) red bell pepper, juilienned

Instructions

Place shrimp in zip top bag or other container.

In a medium size bowl, combine lime juice, soy sauce, brown sugar, red chili paste, garlic and canola oil. Mix well with fork or small whisk.

Pour half of mixture in zip top bag with shrimp, seal and shake gently to coat. Place in refrigerator 1 - 2 hours. Reserve other half of mixture to dress salad.

To cook shrimp, preheat grill to medium-high.

Remove shrimp from bag and gently shake off any residual marinade.

Grill shrimp 6 minutes. Remove from grill and set aside.

Prepare remaining ingredients for salad.

Toss shrimp with salad then drizzle with remaining marinade. Serve immediately.
