Texas Original Borracho Grilled Chicken

1 large whole chicken
2 Tsp H-E-B Texas Originals Borracho Beans Spice Blend
12 Oz beer
12 Oz mild pico de gallo
1 1/2 cup(s) water

Instructions

Sprinkle chicken inside and out with seasoning and set aside.

Pour out half of the beer and fill the beer can with 1/2 cup of the pico de gallo.

Place the beer can on a beer can chicken rack.

Set the chicken, cavity side down, on top of the can.

Cover the chicken with plastic wrap and refrigerate until ready to grill.

To Grill: Place over indirect medium heat, 1 1/2 hours or until the internal temperature of the thickest part of the thigh reaches 180°F.

To Bake: Lower the oven rack to the bottom level and heat oven to 350°F.

Place the beer can chicken rack with the beer and chicken in a large baking dish.

Place a small baking dish with 1/2 cup of water on the baking dish with the chicken.

Bake the chicken for 1 1/2 hours or until the internal temperature of the thickest part of the thigh reaches 180°F.
