Texas Heritage Sausage and Potato Roast

1 1/2 Lb Tuscan Potato Roasting Kit
1/2 medium red onion, cut into 1.5 inch chunks and layers separated
1 large red bell pepper, cut inot 1.5 inch squares
1 Tbsp olive oil
2 sprigs fresh rosemary, leaves stripped from woody stems
12 Oz H-E-BTexas Heritage Beef Brisket Sausage

Preheat oven to 425ºF. Line a rimmed baking sheet with parchment paper or foil and set aside.

Place potatoes, onions and peppers in a large bowl. Drizzle with sauce packet from potato kit and toss to coat.

Spread out in a single layer on prepared pan and roast 15 minutes.

Remove from oven and flip vegetables over. Drizzle with oil, sprinkle with rosemary and nestle whole sausage in middle of pan. Return to oven for 10 minutes.

To serve, cut up sausage and serve with roasted vegetables.

Chef's Note: This makes a great dish for a tailgate party – just tuck sausage and vegetables inside flour tortillas and drizzle with barbeque sauce.
