Texas Chicken Cordon Bleu with Bourbon Peach Glaze

Ingredients

Recipe makes 4 Servings

6 slices prosciutto
4 boneless, skinless chicken breasts, pounded to ¾ inch thick
1 4 oz pkg goat cheese
2 Tbsp fresh basil, finely chopped
2 Tbsp green onions, finely chopped
1 1/2 cup(s) H-E-B Bourbon Peach Glaze, divided
1/4 cup(s) pecans, finely chopped

Instructions

Heat oven to 400ºF.

Cut 2 slices of prosciutto in half long ways. Place one whole slice and one half slice on each chicken breast (cover entire surface).

In a small bowl mash together goat cheese, basil, green onions and 2 tablespoons Bourbon Peach Glaze.

Divide mixture evenly among chicken breasts and gently spread across prosciutto.

Sprinkle pecans over cheese and roll up chicken from short end to short end. Secure with cooking twine or toothpicks

Heat an oven-safe skillet on medium high. Add oil and rolled up chicken. Brown gently on all sides.

Place skillet with chicken in oven and cook 10-15 minutes or until internal temperature reaches 165ºF.

Pour remaining Bourbon Peach Glaze over chicken and cover loosely with foil to keep warm. Let rest 5 minutes before slicing diagonally into medallions.
