Swiss Chard and Scallion Pesto

Ingredients

Recipe makes 12 Servings

3 Oz red Swiss chard, (about 2 cups, roughly chopped)
1/4 cup(s) scallions (green onions), chopped
2 cloves fresh garlic, about 1.5 teaspoons
1/2 cup(s) roasted and salted pistachios
1 1/2 Tbsp lemon juice
1/2 Tsp sea salt, or to taste
1/2 Tsp black pepper, fresh ground
1/2 cup(s) unfiltered olive oil, or less for desired consistency
1/2 cup(s) Pecorino Romano cheese, finely grated

Instructions

Remove 1 inch from top of Swiss Chard leaves. Finely chop and set aside for garnish.

Add remaining chard to bowl of a food chopper or processor. Add scallions, garlic, pistachios, lemon juice, salt, pepper and olive oil. Pulse until smooth. Add cheese and pulse again, just to incorporate.

Chef's Note: To serve, toss over 8 ounces of freshly cooked pasta or with toasted bread. Garnish with reserved finely shredded Swiss chard and additional pistachios if desired.
