Sweet & Sour Red Cabbage

10 cup(s) red cabbage, shredded
4 Tbsp unsalted butter
1/3 cup(s) pure cane sugar
1/2 cup(s) balsamic vinegar
1/8 Tsp iodized salt
1/8 Tsp black pepper

Instructions

Remove and discard outer leaves from cabbage. Cut cabbage in half and remove core then shred.

Melt butter in a 6-quart pot over medium heat.

Sauté cabbage in butter 5-7 minutes, until it begins to wilt. Add sugar and vinegar; toss to coat cabbage.

Reduce heat to medium-low, cover pot and simmer 35-45 minutes, stirring occasionally, until cabbage is very tender.

Stir in salt and pepper. Serve while hot
