Sweet Potato & Black Bean Chili

Ingredients

Recipe makes 4 Servings

2 Tsp extra virgin olive oil
1 small yellow onion, diced fine
2 large sweet potatoes, peeled and diced
2 garlic, minced
1 Tbsp canola oil
2 Tsp ground cumin
1/2 Tsp salt
1 cup(s) water
15 Oz black beans, rinsed and drained
28 Oz diced tomatoes
2 Tsp lime, juiced
2 Tbsp cilantro, chopped

Instructions

Heat extra virgin oil in a large saucepan over medium-high heat.

Add onion, potatoes, garlic, canola oil, cumin and salt. Sauté and stir often, about every 4 minutes.

Add water, bring to a boil, cover and reduce heat.

Maintain a gentle simmer and cook until potatoes are tender, about 10 minutes.

Stir in beans, tomatoes and lime juice and return to a boil.

Reduce heat and simmer 5 minutes.

Remove from heat and garnish with cilantro.
