Recipe makes 12 Servings

2 red radishes
2 cup(s) vinegar
1 cup(s) water
5 fresh garlic cloves, smashed
1 cup(s) white onion, sliced thinly
1 Tsp black peppercorns, whole
2 Tbsp sugar
2 Tbsp kosher salt
1 cup(s) H-E-B Chipotle Garlic Salsa
2 Lb chopped beef caldillo
1 pkg. flour tortillas

Instructions

Wash, rinse, and trim radishes and slice very thin from the top to the bottom. Set aside in a glass bowl.

in a medium saucepan combine vinegar, water, garlic, onion, peppercorns, sugar and salt. Bring to a boil and cook 15 minutes.

Remove from heat and pour hot liquid over the radishes. Cover and chill at least 2-3 hours until liquid is cool and radishes are pickled.

Once radishes are chilled place a sauté pan over medium-high heat, add salsa and beef. Cook until salsa has completely reduced and meat is fully cooked (about 10-15 minutes).

To build tacos place caldillo in tortillas then top with radish escabeche. Season to taste with salt and pepper. Add your favorite taco fixings if desired.
