Steakhouse Burger with Iceberg Wedge & Blue Cheese

20 Oz New York Strip Steak
1 1/2 Tsp kosher salt
2 Tbsp cracked black pepper, divided
3 garlic cloves, minced
1 medium shallot, minced
1/4 cup(s) buttermilk
8 Oz H-E-B Blue Cheese Crumbles
1 Tbsp sherry vinegar
4 hamburger buns
1 head of iceberg lettuce, cut into smaller wedges

Preheat grill to 375°F or medium-high heat.

Prepare steak by seasoning liberally with salt and 1 tablespoon pepper on both sides. Allow to come to room temperature before grilling for best results.

Meanwhile, make blue cheese dressing by combining garlic, shallots, buttermilk, blue cheese, sherry vinegar and remaining pepper in a food processor. Pulse 3-4 times for a chunky dressing or purée 2 minutes for a smooth and creamy dressing. Refrigerate 30 minutes to allow flavors to meld.

Grill steaks 4-6 minutes per side, depending on thickness and desired doneness. Remove from grill and allow to rest. Slice into strips after resting.

Build burger by placing a few slices of steak on a bun, top with a wedge of lettuce and a drizzle of blue cheese dressing. Repeat for each burger. Garnish with any of your favorite burger toppings like tomatoes or fried onion strings.
