100 gram(s) Hill Country Fare Peppermint Starlight Mints, about 18 pieces, crushed, divided use
1/2 cup(s) H-E-B Half & Half
2 Tbsp H‑E‑B Pure Cane Extra Fine Granulated Sugar
2 Tbsp water, boiling
1 Starbucks Peppermint Mocha Single Serve Coffee K Cup
2 Tbsp H‑E‑B Select Ingredients Sweet Cream Liquid Coffee Creamer

In a small bowl, combine 1/4 cup of crushed peppermint candy and half & half. Pour into an ice cube tray and freeze for at least 24 hours.

After peppermint mixture has completed freezing, make the simple syrup. Combine sugar and boiling water in a small bowl and stir until sugar has dissolved. Set aside briefly.

Pour remaining crushed peppermint candy onto a plate. Dip the rim of a glass into the simple syrup, then into the crushed peppermint candy to coat the rim.

Brew K-Cup single serve coffee into a mug. Fill the rimmed glass with the peppermint ice cubes. Pour the brewed coffee over the ice cubes and top with creamer.
