Spinach & Ricotta Roll-Ups

Ingredients

Recipe makes 6 Servings

1 non-stick cooking spray
16 Oz lasagna pasta
16 Oz fat free ricotta cheese
10 Oz frozen spinach, thawed, drained and squeezed dry
1/4 cup(s) basil, chopped
1 large egg
1 Tsp Italian seasoning
15 1/2 Oz marinara sauce
1/2 cup(s) shredded mozzarella cheese

Instructions

Cook pasta according to package directions. Drain well and lay noodles flat on a clean, dry towel.

Preheat oven to 400ºF and lightly grease a 9 x 13-inch baking dish. Set aside.

In a large bowl, combine ricotta, spinach, basil, egg and Italian seasoning. Mix well.

Spread a spoonful of ricotta filling completely over 1 side of cooked noodle. Carefully roll up and place seam side down in prepared baking dish. Repeat until all noodles are filled.

Top with marinara sauce and sprinkle with mozzarella. Bake just until cheese is melted and sauce is bubbly.
