Spinach and Feta Stuffed Pork Loin

1 pork loin
1 Tbsp Adams Reserve House All Purpose Rub
1/2 cup(s) feta cheese, crumbled
1 cup(s) fresh spinach, chopped
6 slices H-E-B Original Bacon
1 cup(s) Fischer & Wieser Four Star Provisions Cherry Pomegranate Habanero Sauce, warmed

Instructions

Preheat oven to 375°F. Spray baking sheet with cooking spray and set aside.

Remove silver skin and fat from pork loin and discard. Place pork on a large cutting board and cover with a sheet of parchment paper.

Using a kitchen mallet, beat loin from the center out until it's approximately 1/4 inch thick. It will be oval shaped. Coat both sides with rub.

In a separate bowl, combine Feta cheese and spinach then place in center of loin and roll lengthwise, ending with seam-side down. Tie with butchers twine if desired.

Beginning at one end, wrap loin in bacon strips. Bake for 20 to 25 minutes, or until internal temperature reaches 155ºF.

Top with cherry pomegranate habanero sauce.
