Spicy Peanut Butter Grilled Chicken Kebabs

8 Hill Country Fare Bamboo Skewers
1/4 cup(s) water, plus more for soaking skewers
1 Lb H-E-B Natural Boneless Skinless Chicken Breasts, cut into strips
1 green bell pepper, large diced
1 orange bell pepper, large diced
2 yellow summer squash, sliced into thick rounds
1/2 cup(s) H-E-B Texas Creamy Peanut Butter
2 garlic cloves, minced
2 Tbsp Kikkomon All-Purpose Less Sodium Soy Sauce
2 Tbsp fresh lime juice
2 Tbsp H‑E‑B Texas Wildflower Honey
1 Tbsp Central Market Organics Crushed Red Pepper Flakes
1 Tbsp McCormick Ground Ginger
1/3 cup(s) H-E-B Select Ingredients Dry Roasted & Seasoned Peanuts, chopped
1/4 cup(s) cilantro, chopped

Instructions

Immerse skewers in water and soak for 10 minutes. Meanwhile, preheat grill on medium-high heat.

Season chicken with salt and pepper. Thread onto skewers along with bell pepper chunks and sliced squash.

In a medium bowl, add peanut butter, garlic, soy sauce, 1/4 cup water, lime juice, honey, red pepper flakes, and ground ginger. Whisk until smooth, adding more water to thin sauce as needed. Reserve half the sauce for dipping.

Brush kebabs with some of the remaining sauce, and spray lightly with cooking spray.

Coat gas grill grates (or grill pan) with cooking spray. Place skewers on grill, cover, and cook 4 to 5 minutes.

Turn kebabs and brush with remaining sauce. Cook 4 to 5 additional minutes until chicken is no longer pink.

Garnish with freshly chopped peanuts and cilantro. Serve with dipping sauce on the side.
