Spicy Greek Tzatziki Dip

Ingredients

Recipe makes 8 Servings

2 large jalapeños
2 cup(s) plain Greek yogurt
3 cloves of garlic, minced or zested
2 Tbsp fresh mint, minced
2 Tbsp lemon juice
1 Tbsp fresh dill, minced
1/2 of an English cucumber, grated through a cheese grater
1/4 cup(s) extra virgin olive oil

Instructions

Toast jalapeños in a dry non-stick pan until nicely charred on all sides, cover and allow to steam. Peel skins off and finely mince jalapeños.

In a bowl, combine yogurt, garlic, mint, lemon juice, minced jalapeños, dill and grated cucumber. Mix well to combine then fold in olive oil and season to taste with salt and pepper.

Refrigerate at least 30 minutes to allow flavors to meld (or overnight is best). Serve with pita chips or vegetables.

Chef's Note: For best results, grate cucumber over paper towels then wrap the paper towels around the grated cucumber and squeeze out as much water as possible before adding to tzatziki.
