Spicy Bean and Smoked Cheese Sopas

Recipe makes 6 Servings

6 Cacique Sopes De La Casa, approximately 12 oz. plus more as needed
1 Oz non-stick spray, as needed
1/4 cup(s) fresh squeezed lime juice
16 Oz Rosarita Organic Spicy Jalapeño Refried Beans
3 cup(s) H-E-B Post Oak Smoked Havarti, shredded

Instructions

Preheat oven to 375°F.

Place sopes on a sheet pan lined with parchment paper and spray evenly with oil to coat. Bake for 20 to 25 minutes.

Remove from oven and allow to cool. Meanwhile, place a small pot over medium heat.

Add lime juice and beans, and bring to a simmer. Remove from heat.

Add a little cheese to lightly cover the bottom of each sope then fill evenly with a spoonful of beans and top with more cheese.

Bake for 10 to 15 more minutes or until cheese is nicely melted.

Allow to cool slightly before serving. Top with anything from guacamole to sour cream or salsa.
