Recipe makes 8 Servings

1 cup(s) vegetable oil, plus more as needed for frying
8 Mi Tienda Street Taco Flour Tortillas, as needed
1/4 cup(s) cinnamon sugar, plus more as needed
1 Qt H-E-B Creamy Creations 1905 Vanilla Ice Cream, as needed for sandwiches
1/4 cup(s) decorative sprinkles, as needed for garnishing

Instructions

Place a non-stick skillet over medium heat, add oil and bring temperature to approximately 325°F to 350°F.

Cut tortillas with a 2 to 3-inch round cookie cutter, about the size of a scoop of ice cream.

Fry tortillas in batches until just slightly browned and puffed before flipping, about 2 minutes.

Place fried tortillas on a sheet pan fitted with a wire rack and sprinkle with cinnamon sugar. Cool completely.

To assemble sandwiches, place a scoop of ice cream in between two fried tortillas and roll sides in sprinkles. Repeat for each sparkle ice cream sandwich.

Chef's Note: Fry tortillas in a shallow pan; this will prevent them from over puffing too much. If puffier sopapillas are desired, fry with more oil in a deeper pan.
