Spanish Churros

Ingredients

Recipe makes 6 Servings

1/2 cup(s) sugar
3 Tbsp ground cinnamon, (optional: in Spain, churros are rolled in sugar only)
1 cup(s) milk
4 Tbsp butter
1 Tsp salt
1 cup(s) flour
3 large eggs, beaten
2 cup(s) vegetable oil for frying
1/2 cup(s) dark chocolate
1/2 cup(s) heavy cream

Instructions

Combine sugar and cinnamon together in a shallow dish. Set aside.

In a large sauce pot, bring milk, butter and salt to a simmer. Then stir in flour. Continue to stir until a ball of dough is formed.

Remove from heat. Mix in the eggs.

Transfer dough to a pastry bag with a star tip.

In a heavy bottom Dutch oven, heat oil over medium-high heat. Once oil is hot, pipe out 3 to 4 inch pieces of dough into the oil.

Fry churros until golden brown. Remove from oil, transfer to a paper towel to drain. While still warm, toss in cinnamon sugar. Continue frying in batches until all of the dough has been fried.

Melt chocolate and heavy cream together in a microwavable safe dish. Stir well and serve alongside the churros.
