1 Pt H-E-B Creamy Creations 1905 Vanilla Ice Cream
6 Sensational Belgian Chocolate Chip Cookies
3 1/2 Oz Lindt Chili Dark Chocolate Bar, finely chopped

Instructions

Remove ice cream from freezer and allow to thaw slightly on counter for about 5 minutes.

On a baking sheet or cutting board, turn half of cookies upside down so flat side faces up.

Place chopped chocolate on a small plate.

Slice thin sections of ice cream with a knife. Layer about 3/4 an inch of ice cream on upside down cookies then top with right-side up cookies. Gently press together, being careful not to break cookies.

Roll each cookie sandwich sideways through the chopped chocolate. Re-freeze for about an hour before serving.
