Smoky Turkey and Black Bean Chili

Ingredients

Recipe makes 4 Servings

1 Tbsp olive oil
1 Lb ground turkey
1 Tsp ground cumin
1 Tsp smoked paprika
1 Tsp steak seasoning
8 Oz baby bella mushrooms, chopped into small pieces
1/2 medium red onion, finely chopped
20 Oz canned diced tomatoes and green chilies
15 Oz low sodium black beans
1/4 cup(s) fresh cilantro, leaves only, finely chopped

Instructions

Heat a large pot over medium-high heat. Add oil, turkey, cumin, paprika, and steak seasoning. Stir and cook until turkey is cooked through and starting to brown a little.

Add mushrooms and onions. Stir and cook for 4 to 5 minutes until onions start to soften.

Add tomatoes and green chilies and beans. Stir to combine, reduce heat to medium, and cover. Simmer for 5 to 8 minutes, or until tomatoes are cooked through.

Remove from heat and stir through fresh cilantro. Serve with grated cheese or sour cream as desired.
