Ingredients

Recipe makes 24 Servings

2 H-E-B Large Grade AA Eggs, lightly beaten
1/4 cup(s) H-E-B 2% Milk
4 Oz H-E-B Diced Pimientos, rinsed & drained
11 Oz Green Giant Mexicorn, drained
1/2 cup(s) Daisy Sour Cream
6 Oz Bisquick Complete Baking Mix

Instructions

Combine eggs, milk, drained pimientos, Mexicorn, sour cream and baking mix in a large mixing bowl; stir well and set aside.

Heat an electric griddle to 400°F or a large skillet/cast iron griddle 3 minutes on high heat.

Lightly grease hot griddle with oil.

Pour 2 tablespoons of batter for each fritter on hot griddle.

Cook fritters for 1 - 1 1/2 minutes per side. Turn fritters only once.
