Instructions

1
Add vegetable oil to a medium sauté pan over medium heat. When oil is hot, add tilapia and cook 2 minutes then flip and cook for an additional minute.
2
Stir in chipotles in adobo sauce and pico de gallo, breaking tilapia into small pieces as you mix. Remove from heat.
3
Add 3 cups of vegetable oil to a heavy bottomed pot over medium heat and bring to 350°F.
4
Meanwhile, divide tilapia mixture between the tortillas. Add 1/2 ounce of cheese to each and roll up tightly. Place seam-side down on a sheet tray.
5
Fry flautas in batches in hot oil, being careful not to overcrowd the pan. Cook about 4 minutes or until golden brown and crispy then drain on paper towels.
6
Serve with pico de gallo, sour cream, and guacamole if desired.
