Shrimp Scampi with Zucchini Zoodles

Ingredients

1 Tbsp olive oil
1 Tbsp garlic, minced
1 small lemon, juiced and zested
1/2 cup(s) dry white wine
3/4 Lb shrimp, peeled and deveined
10 .7000 Oz Veggie Noodle Co. Zucchini Spirals
1 Tbsp salted butter
1 Tbsp parsley, chopped

Instructions

Heat oil in a large nonstick skillet.

Add garlic, and cook until fragrant.

Add lemon juice and zest, white wine, and reduce by half.

Add shrimp, and cook for several more minutes until done.

Add zucchini spirals.

Add butter, toss a few times to coat spirals, garnish with parsley and serve.
