Savory Spinach & Kale Kugel

Ingredients

Recipe makes 6 Servings

1 cup(s) fat free sour cream
1 cup(s) low fat cottage cheese
4 Tbsp olive oil
4 eggs, beaten
1/2 package Central Market Trecce Pasta
1 white onion, juilienned
2 cloves of garlic, minced
2 cup(s) baby spinach
2 cup(s) baby kale
1 Tsp kosher salt

Instructions

Preheat oven to 350˚F.

Combine sour cream, cottage cheese, 2 tablespoons of olive oil and eggs together in a bowl and set aside.

Bring a large pot of water to boil and cook pasta al dente. Strain and stir into cheese mixture.

Add remaining oil to large skillet and heat over medium-high. Add in onions and garlic and cook until tender and lightly browned.

Now add in spinach and kale, season with salt and cook until wilted. Then add to pasta and cheese mixture.

Transfer mixture to a large greased baking dish and bake for 40 minutes. Serve hot.
