2 H-E-B Bakery French Sticks
16 Oz Hill Country Fare Pork Smoked Sausage
1 cup(s) white onions, chopped
4 garlic cloves, minced
2 H-E-B Large Grade A eggs, beaten
5 Tsp H-E-B Dijon Mustard (reserve 1 Tablespoon)
1 cup(s) H-E-B Fancy Shredded Colby-Jack Cheese
1/2 cup(s) H-E-B Parmesan cheese
1/3 cup(s) flat-leafed Italian parsley leaves, loosely packed
1/3 cup(s) H-E-B 100% Pure Olive Oil
1 Tsp Hill Country Fare Ground Black Pepper

Heat oven to 350°F.

Split bread horizontally. Hollow out each half from center of loaf; leave 1/2-inch border at sides and bottom.

Place bread removed from loaves in blender or food processor; pulse to make fine crumbs. Set loaves and crumbs aside.

Heat large skillet over medium-high heat. Add sausage, onion and garlic. Brown sausage 6 to 8 minutes until no longer pink; break sausage into fine crumbles with edge of cooking spoon.

Remove skillet from heat. Stir in breadcrumbs, eggs and mustard.

Place following ingredients in blender or food processor: reserve mustard, cheeses, parsley, olive oil, and pepper. Pulse to chop parsley and blend ingredients.

Spread mixture evenly over insides of loaves and spoon one-fourth sausage mixture into each cavity.

Put halves back together. Wrap each loaf in foil and seal tightly.

Place loaves on baking sheet; bake 30 minutes, or until bread is crusty and filling is hot. Let stand 2 minutes.

Cut into 3/4-inch thick slices and serve.
