Salmon with Spicy Toasted Ciabatta Crumbs

Ingredients

Recipe makes 2 Servings

1/3 cup(s) extra virgin olive oil, plus 2 tbsp. more for searing salmon and garnishing
1/2 Tsp crushed red pepper, plus more as needed to taste
1 Tbsp fresh garlic, minced or zested
2 cup(s) H-E-B Scratch Made Ciabatta Bread, cubed small
1 Tsp fresh rosemary, leaves only roughly chopped
1 Tsp Central Market Organics Whole Mediterranean Oregano
12 Oz salmon fillets, approximately 2 (6 oz.) fillets

Add oil to a large non-stick pan over medium heat.

When oil is hot, add crushed red pepper and garlic. Cook about 30 seconds before adding cubed bread.

Stir-fry 5 to 10 minutes keeping everything moving so bread toasts evenly. Continue to cook until bread is nicely toasted and crispy.

Scrape everything into a food processor then add rosemary and oregano. Pulse until bread reaches panko-sized crumbs. Season to taste and set aside.

Wipe out pan, place back over medium heat, add more oil and allow to get hot. Meanwhile, season salmon liberally with salt and pepper.

Place salmon flesh-side down, skin-side up in hot pan.

Cook 5 to 7 minutes or until salmon has a nice crust on it, flip and continue to cook to an internal temperature of at least 150°F.

Once salmon is cooked to desired doneness, allow to rest briefly, drizzle with olive oil and garnish with spicy crumbs. Season to taste and serve.
