Romesco Chicken Skewers

1 Lb boneless skinless chicken breast, cut into strips
8 Oz Four J Romesco Sauce, divided use
1/2 Tsp cracked pepper
1 Tbsp olive oil
10 1/2 Oz butternut squash spirals

Instructions

Soak wooden skewers in water for a minimum of 30 minutes, then thread chicken breasts onto skewers, brush with romesco and season with pepper.

Preheat grill to medium heat, place skewers on the hot grill and cook for 10 to 12 minutes, turning occasionally.

For the butternut squash spirals heat oil in a large skillet over medium heat. Sauté for 3 to 4 minutes, add in remaining sauce. Bring to a low simmer then remove from heat and serve.
