Roasted Potatoes with Garlic and Herbs

2 Lb red potatoes, size C
2 Tbsp Ottavio Grapeseed Oil
3 Oz Wyatt's Tuscan Herb Finishing Butter
1/4 Tsp kosher salt
1/4 Tsp black pepper

Instructions

Preheat oven to 400ºF

Rinse and dry potatoes. Toss in grapeseed oil and a liberal amount of salt and pepper.

Place potatoes on a sheet pan and roast for 30-45 minutes, or until potatoes are crispy and fully cooked.

While potatoes are roasting, melt Tuscan herb or roasted garlic butter in a small sauce pan, and set aside.

Toss butter with cooked potatoes and serve immediately or make mashed potatoes.
