Roasted Brussels Sprouts, Apples, Celeriac and Radishes

Recipe makes 6 Servings

2 Lb brussels sprouts, bottoms trimmed and sprouts cut in half
1 bunch of radishes, tops trimmed and radishes cut into 2-3 vertical slices each
1 large Fuji apple, medium dice
1 large celeriac or celery root, diced
2 Tbsp Rustico di Casa Asaro Unfiltered Extra Virgin Olive Oil
1 Tsp kosher salt
1 Tbsp cracked black pepper
1 Tbsp sherry vinegar

Instructions

Pre-heat oven to 400˚F.

In a large bowl combine brussel sprouts, radishes, apples and celeriac together. Toss with olive oil and salt and pepper, then place on a sheet pan and roast in oven for 35-45 minutes or until caramelized.

Once veggies are caramelized remove them to a serving bowl, add in sherry vinegar and toss. Season to taste with salt and pepper.
