1 Tbsp Hill Country Fare Canola Oil
1 Lb H-E-B Natural Pork Tenderloin, thinly sliced
1/2 white onion(s), julienned
1 red bell pepper, cored, seeded and julienned
1/2 cup(s) fresh cilantro, chopped
1 cup(s) green onion(s), chopped
1/4 cup(s) freshly ground honey roasted peanut butter
1/4 cup(s) red curry paste
1 cup(s) lite coconut milk
1 Tbsp lime(s), juiced

Instructions

Heat oil in large non-stick skillet. Add pork tenderloin and cook until well browned.

Add onions, red bell pepper, cilantro and green onions. Cook for an additional 4 minutes stirring constantly.

Stir in peanut butter, curry paste, coconut milk and lime juice. Bring skillet up to a simmer then reduce heat. Simmer for an additional 5 minutes then serve with jasmine rice.
