1 1/2 cup(s) unsweetened organic almond milk
13 1/2 fl oz organic coconut milk
15 Oz H-E-B Organics Pumpkin Puree
3/4 cup(s) organic coconut sugar
1 Tsp dried thyme leaves, crushed to release flavors
1 Tsp vanilla extract
1/2 Tsp cinnamon
1/4 Tsp nutmeg
1 Tsp sea salt
1 1/2 Tbsp Rustico Unfiltered Olive Oil

Instructions

In a large bowl whisk almond milk, coconut milk, pumpkin puree, coconut sugar, thyme, vanilla extract, cinnamon, nutmeg and salt. Allow to sit for 30 minutes for flavors to infuse.

Place pumpkin mixture in an ice cream maker and churn to desired thickness.

In a slow thin stream add 1 tablespoon olive oil while finishing churning. Serve immediately or freeze until ready to serve.

Chef's Tip: Crumble shortbread cookies and fresh thyme over the top for a gorgeous presentation. This recipe can also be made with homemade pumpkin puree.
