1 Tbsp Hill Country Fare Vegetable Oil
1/2 small white onion, sliced and separated into rings
1/2 cup(s) green bell peppers, chopped
1 Lb H-E-B 93% Lean Ground Beef
1/2 cup(s) H-E-B Unsalted Tortilla Chips, crushed
1 Tsp H-E-B Beef Fajita Seasoning
1 1/2 cup(s) H-E-B Chef Prepared Mashed Potatoes
1 Tbsp unsalted butter
1/2 cup(s) H-E-B Brown Gravy

Instructions

Heat oven to 400°F.

Spray a 2-quart loaf pan with non-stick cooking spray and set aside.

Heat oil in a large skillet over high heat.

Add onion and cook until crisp brown on edges (about 2 minutes).

Add green bell pepper and cook 2 more minutes; remove from heat.

Combine onion-bell pepper mixture, ground beef, tortilla chips and fajita seasoning in a large mixing bowl.

Place meat mixture in prepared loaf pan and press over the bottom and up the sides of the loaf pan to make a shell 1/2-3/4 inch thick.

Fill the center with prepared mashed potatoes and dot with butter.

Bake for 40-50 minutes or until thermometer reads 160°F.

Drain excess liquid and let sit for 10 minutes.

Top with gravy and serve.
