Pork Chops with Garlic Rainbow Chard & White Beans

Ingredients

Recipe makes 6 Servings

1 Tbsp canola oil, divided
24 Oz pork chops, about 3/4 to 1 inch thick
1/2 Tsp garlic powder
1/4 Tsp black pepper
1 cup(s) yellow onion, julienned
2 garlic, sliced
1 Lb organic red swiss chard, sliced into strips
1 15.5 oz. can white beans, rinsed & drained
2 Tbsp cooking sherry
4 Tbsp Gorganzola cheese, crumbled

Instructions

Heat half of canola oil in a large nonstick skillet on medium-high.

Season pork chops with garlic powder and black pepper then sear several minutes on each side. Remove to a plate, cover with foil and set aside.

Return skillet to heat and add remaining oil. Add onions and cook 2 to 3 minutes.

Add garlic and rainbow chard. Cook several minutes, stirring frequently, until chard is wilted.

Stir in beans, sherry and any residual juices from the pork chops.

For each serving place greens with beans on a plate, top with a pork chop and a small sprinkle of cheese.
