Poblano Parmesan Mashed Potatoes (Instant Pot)

Ingredients

Recipe makes 8 Servings

4 Tbsp salted butter
1 cup(s) chicken stock or bone broth
1 Tsp sea salt
1 Tbsp fresh garlic, finely minced
15 Oz H-E-B Poblano and Parmesan Pasta Sauce
3 Lb gold "Carb Smart" potatoes, cubed into 2 inch cubes

Instructions

Add butter, broth, salt, garlic poblano sauce and potatoes to instant pot. Cover and seal.

Set pot to "manual" setting for 15 minutes (pot may take 10 to 12 minutes to pressurize).

Release pressure when cooking time is complete. Using a potato masher, mash to desired consistency. Add additional broth if thinner texture is desired. Season with salt and pepper to taste.

Chef's Note: For a spicier version add finely chopped serrano pepper to mixture before cooking.
