2 cup(s) peanut oil
1 plantain banana, very green

Instructions

Place oil in a 1 quart sauce pan on medium heat for 10 minutes.

Peel plantain by hand or with a vegetable peeler.

Slice plantain slowly and let pieces fall directly into the oil.

Turn oil up to medium-high heat.

Fry chips for 2 minutes; stirring occasionally.

Remove chips and place over a napkin on a side plate.

Allow chips to cool 2 to 3 minutes before serving.
