Pan Roasted Shaved Beets with Pepitas and Mint

3 Tbsp Wyatt's Tuscan Herb Finishing Butter
4 medium beets, peeled & shaved thinly with vegetable peeler
1/4 Tsp salt
1/4 cup(s) toasted pepitas or pumpkin seeds
2 Tbsp mint, chopped fine
1/4 Tsp pepper

Instructions

In a large nonstick skillet, heat butter until just starting to bubble, add shaved beets, and season with salt and pepper. Stir fry about 4-5 minutes or until beets are just soft.

Remove from heat, add pepitas and mint, and toss to combine. Add a little more butter if desired.

Serve hot or cold. Great as a salad or appetizer.
