Pan Roasted San Marzano Tomatoes

Recipe makes 4 Servings

2 Tbsp extra virgin olive oil
2 garlic cloves, peeled
2 San Marzano or cherry tomatoes, 2 pints
1/2 Tsp kosher salt
1 Tsp dried chili flakes *optional

Wash tomatoes and allow them to dry before cooking. In a sauté pan add olive oil and allow to get hot, smash your garlic flat and toss in hot oil. Fry the garlic in oil until just starting to brown, remove garlic with a slotted spoon and reserve oil in pan.

Add tomatoes to the hot pan and stir-fry for about 4 - 5 minutes before adding salt and chili flakes. Continue to cook tomatoes for another 5 - 8 minutes until tomatoes are soft and starting to caramelize a bit. Remove from heat and allow to cool.

Serve on fresh pizza or garnish blistered tomatoes over a nice steak.

For broiler option, place tomatoes with garlic, olive oil and salt in an oven safe dish and place them on an oven rack positioned about 8 inches under broiler, toss them and allow them to blister and roast. Cook for about 6 - 10 minutes (toss every few minutes to insure even cooking) or until they just have color and are starting to wilt.
