Ingredients

Recipe makes 4 Servings

1 3 second spray of non-stick cooking spray
1 cup(s) all purpose flour
1 1/2 cup(s) Panko (Japanese breadcrumbs)
1 large eggs, lightly beaten
1 1/4 Lb cod fillets, cut 1/2-inch thick
1/2 Tsp kosher salt

Instructions

Preheat oven to 375°F. Lightly coat baking sheet with non-stick spray and set aside.

Place flour and breadcrumbs in 2 separate shallow dish or bowls.

Whisk 3 tablespoons water with egg in a third shallow bowl.

Cut fish into 20 (4 x 1/2-inch) strips.

Dredge fish in flour, shaking off excess. Dip in egg mixture, then dredge in breadcrumbs.

Place on a prepared baking sheet coated with cooking spray. Bake at 375°F for 30 minutes or until crisp. Sprinkle with salt if needed and serve immediately.
