Oven Baked Beef Taquitos

Ingredients

Recipe makes 6 Servings

1/2 Lb extra lean ground beef
1 Tsp garlic powder
1 Tsp chili powder
1/4 cup(s) H-E-B Organics Medium Salsa
15 Oz H-E-B No Salt Added Black Beans
1/2 cup(s) green onions, chopped
18 yellow corn tortillas
1 cup(s) 2% fat shredded cheese

Instructions

Preheat oven to 400°F and line a sheet pan with foil. Set aside.

Heat a large non-stick skillet over medium-high. Add ground beef, garlic powder and chili powder. Cook several minutes, breaking apart beef as it cooks.

Once beef is cooked add salsa, black beans with liquid and green onions. Continue to cook until liquid is gone.

While liquid in pan is reducing, wrap tortillas in a damp paper towel and place in microwave for 30 seconds.

Place about a half tablespoon of cheese in the tortilla and add 2 scoops of filling. Roll the tortilla and place on foil lined sheet pan seam side down. Repeat until all taquitos are rolled.

Lightly spray nonstick spray over taquitos and bake 15 minutes or until edges begin to brown.

Cool before serving.
