Oregano-Lime Grilled Sirloin

4 H-E-B Peeled Garlic, crushed or minced
1 shallots, minced
1/4 cup(s) lime, juiced
2 Tbsp H-E-B Extra Virgin Olive Oil
2 Tbsp red wine vinegar
1 Tbsp oregano leaves, chopped
1 Tsp H-E-B Sugar
1 Tsp kosher salt
1 Tsp black pepper
2 Lb beef top sirloin steak, 1 inch thick

Instructions

Combine garlic, shallots, lime juice, olive oil, rice wine vinegar, oregano leaves, sugar, kosher salt and black pepper in a 1-gallon seal-able plastic bag.

Add steak to bag; seal bag and toss to coat.

Place in refrigerator to marinate 12-24 hours.

Remove steak from refrigerator; let stand in marinade at room temperature 10-30 minutes while preparing grill.

Heat charcoal 30 minutes until covered with a light layer of gray ash or heat gas grill 10 minutes with lid closed.

Grill steak 4 inches above Medium heat (375°F grill surface temperature).

Cook steak 9-12 minutes per side.

Remove from heat when internal temperature of steak reaches 140°F for medium-rare or 150°F for medium doneness.

Let stand 3-5 minutes; cut and serve
